Zucchini Side Dish

I think my sister-in-law and I have this conversation every summer: “Lisa, I can’t think of anything to do with zucchini and I have all this zucchini!” She always comes through and boy does she have a great memory for dishes I made eons ago!

This year’s conversation reminded me of a dish that I had read about online. I can’t find the exact site and I didn’t record it in my recipe notes, but I’ll give you the gist of what the original person came up with:

Cubed zucchini
Mushroom
Onion
Pepper
Garlic
Italian seasoning
Salt and Pepper to taste

Saute the vegetables as you would normally saute them and season with salt, pepper and Italian seasoning. Freeze when cool.

Feeling lazy, I eliminated the mushroom and Italian seasoning for the first two batches. The next batch will have the seasoning. Even just a bit of basil would add some flavor.

Not only can this dish serve as a side, it can also turn into a meatless main dish by adding pasta and/or white beans. Maybe some dried tomato?
