Ongoing linky parties: Motivation Monday and Fabulously Frugal Thursdays.
Disclosure: This post may contain affiliate links to support running A Life in Balance. When I looked at the calendar yesterday for the week, I realized that Lent is on Wednesday which means a meatless meal for Wednesday and our traditional pancakes on Fat Tuesday.
I also realized that I had return the $5 Dinner Mom Cookbook, and the recipe I need isn’t available online anymore, hence the substitute recipe from Good Cheap Eats.
The Plan
Monday- Chicken and Wild Rice Bake (Good Cheap Eats) Was Ginger Chicken Stir Fry (The $5 Dinner Mom Cookbook)
Tuesday – Pancakes, bacon, scrapple
Wednesday – Tortellini, green beans
Thursday – Leftovers
Friday – Homemade Pizza
Kitchen Prep
- cut up veggies
- No Knead Dutch Oven Bread with sourdough starter
- make 6 loaves of bread
- make cinnamon rolls on Friday for the weekend
- yogurt – maybe, if the yogurt in the fridge is gone
- chicken stock

Barb, I have a question about your bread recipe….since I’m the only one that eats bread at my house and then only for sandwiches, does your bread slice well? I have made bread in the past but it was hard to slice nicley. Any help would be great!
Yes, it does! I bake it in Pampered Chef stoneware, and Greg cuts it for sandwiches. It can slice pretty thinly as long as it’s cooled down. The crust isn’t very hard.
That’s right! Lent is coming up. I love pancakes anyways but I’m thinking of making them one night.
Your menu plan sounds delicious.
Have a wonderful week!
