Since it’s back to school week, I decided that it’s back to Menu Planning Monday! In late August, I saw down with a blank September calendar, a few cookbooks, a few recipe lists, and our September calendar, and pencilled a plan on the blank calendar. I’ve already had to re-adjust the plan thanks to Hurricane Irene. However, the written plan combined with Springpad has kept me on track for at least a week. I’m anxious to see how this week goes with the staggered starting of grades at our school.
Monday – My husband is in charge.
Tuesday – Breaded Chicken thighs, roasted potatoes, and crispy salad (Taste of Home Busy Family Cookbook)
Wednesday – Spaghetti and Meatballs, sauteed green beans with garlic
Thursday – Leftovers
Friday – Pizza

I wish I were as organized as you and had a menu plan. We usually plan at breakfast what we are having the rest of the day. Today Hubs is grilling out…. Yay!!

I’m really bad about menu planning. I just don’t want to sit down every week and think about it. A month’s worth of dinners covers me for the month, and I can change things if I need to. I still need to discipline myself about school lunches.
